Corry's Notes: In 2018, I knew we wanted to make another Rose of 50 West and it was exciting to get creative with this Pet Nat. The weather stalled ripening, so turning Tannat—a high acid variety—into rosé seemed like the perfect choice. Why not add bubbles? To create carbonation, the wine is bottled during alcoholic fermentation. CO2 is a byproduct of fermentation, so the bubbles are trapped inside the bottle upon completion of fermentation. Method Ancestral (also known as Pet Nat) produces a more rustic style of fizz than other sparkling methods. It is meant to be enjoyed young and ice cold.
